
One of my favourite restaurants in Sicily is Singola Ristorante Naturale <https://www.singolaristorantenaturale.com/en/> in Modica. The restaurant is located in a beautiful orchard like walled garden. The cuisine is focused on seasonal, organic and locally-sourced ingredients.

I was thankful to join Chef Pasquale Passannante to learn how to make his delicious Sicilian risotto.

Step #1: Heat risotto rice in pan, dry until hot. It’s essential to keep stirring.
Step #2: Add a glug of olive oil and a pour of white wine to add to the richness of flavour.

Step # 3: Deglaze throughout the cooking process with vegetable stock.

Step #4: Cook the risotto rice until it is slightly translucent and forms a creamy sauce.

Step #5: Add spoon of roasted pumpkin.

Step #6: Grate lime rind on top of the risotto.

Step #7: Top the risotto with roasted cabbage and sundried tomato crisp.
